Cauliflower Fried Rice

Ingredients

2 Tbsp chopped onion

1 Tbsp butter & 1 Tbsp. Olive oil

3 eggs

1 package of frozen riced veggies

2 cups of frozen stir fry veggies

1 cup chopped cooked chicken

Little less than ¼ cup coconut aminos OR reduced sodium soy sauce

Salt & Pepper to taste

OPTIONAL: Sesame seeds and/or chopped green onion to garnish

So much more colorful than the usual crowd pleaser and OH SO flavorful!

Directions

Heat olive oil & butter on medium high in large pan on stovetop. Add onion and saute until softened. Add garlic & lightly beaten eggs to pan & scramble until eggs are almost cooked through. Add cauliflower rice and frozen veggies to pan, turn heat to medium and cover pan. Cook for 10-15 minutes until veggies are thawed. Remove cover, turn heat up to medium high and add chicken, coconut aminos and salt & pepper. Saute a couple more minutes or until browned to your liking. Garnish with sesame seed and green onion if desired. Enjoy!!
